Warming water temperatures and inflow from spring rains and melting snow trigger bullheads to move toward shore and start feeding. The best time to catch bullheads is when the water temperature is between 55 and 70 degrees. They can be caught in colder water, but the bite is less aggressive.

Start in shallow water which warm faster. On a sunny day, there can be a 10 to 20 degree difference between the shallows and the main lake basin. The windward side warms faster than the lee side of lakes on sunny, windy days, attracting bullheads.

Areas of in-flowing water are key early spring bullhead spots with warmer water and large amounts of food. Daytime is best to catch bullheads in early spring. They start to move off shore during the day in late spring encouraging anglers to fish after dark as the bullheads come back in the evenings to eat. Bullheads move toward shore to start spawning in May and early June. Fish look for nest sites in shallow water, near rocks and stumps. Spawning lasts about two weeks depending on water temperature and weather.

Bullheads are easy to catch during spawning. Most deep man-made lakes and reservoirs stratify and develop a thermocline a thermal water temperature barrier that forms in deeper lakes in July and August. Little or no dissolved oxygen or fish are below the thermocline.

Cast out as far as you can in late spring and early summer for excellent catches of bullheads. You can often fish for bullheads from shore. These factors make bullheads a good fish to target if you're new to fishing. You can practice using your tackle while you get easy bites from bullheads.

When taken from clean and rather cool water, bullheads are very tasty. There is often no creel limit set by wildlife agencies. The creel limits that do exist are usually very generous. Bullheads also do okay in brackish water. They can tolerate water temperatures over 90 degrees. Like most North American catfish, the hornpout has eight barbells whiskers.

The barbells have taste buds all over them. Bullheads have strong jaws, and dozens of needle-like teeth inside their mouths. My brother learned this the hard way. He stuck his finger in a bullhead's mouth. He'll never do that again!

They have very wide, large mouths for a fish of their size. Bullhead catfish travel in schools looking for food. It is not the barbels whiskers that sting. Rather, there are three fins to watch out for. The dorsal fin is on the top of the fish behind the head.

The two pectoral fins extend sideways behind the head. Bullhead catfish can inject poison with the spine on any of these three fins. My dad did get stung once and he was hurting for a week. But once bullheads reach 10 inches in length, we fishermen show up and harvest them! Most bullheads average around 10 inches long. A good-sized specimen is inches long and weighs about two pounds. A three-pound bullhead is a rare trophy; it measures about 17 inches long. Anglers pursue horned pout for tasty meals, fast action, and catfish bait.

Bullhead are not considered trophy fish. Even world record catches have run only about seven to eight pounds. In North America, you will commonly encounter three types of bullheads. I have also heard a lot about chicken livers. And of course there is the old standby of night crawlers. I think the pollywogs worked well in swampy areas because of the natural populations that they are used to feeding on. They are harder than heck to keep on the hook when you cast them so cast very gently.

I remember trying pollywogs decades ago. A big fat bullhead would slurp them off the hook before you even knew what happened. We went back to night-crawlers. Free, less work, and a lot longer lasting. Chicken livers were for 'gizzards-n-greens' rather than bait, but fatty chunks of chicken skin that were going to be tossed anyway were always good. Two best baits I have used is leeches and Pig liver.

Calf liver doesn't work well since it is too soft and they get it off the hook easily. If you cut the pig liver in strips about night crawler size and ball on the hook it is killer.
